Llevamos tres semanas inmersos en el segundo trabajo m\u00e1s importante del a\u00f1o, despu\u00e9s de la vendimia: embotellar. Son d\u00edas muy intensos y de mucho trabajo. Embotellar es poner el ‘vino base’ junto con las levaduras y az\u00facares dentro de cada botella de cava. Nosotros hacemos todo el proceso manualmente y embotellamos por gravedad; esto significa que no utilizamos ninguna bomba y de este modo el vino no se oxida y entra en las mejores condiciones en la botella. La secuencia es: pones el ‘vino base’ en las botellas – nosotros lo hacemos mediante unos ‘ca\u00f1os’ -, seguidamente pones el obturador (peque\u00f1a pieza de pl\u00e1stico), despu\u00e9s subimos las botellas por una canal, y finalmente las chapamos con una m\u00e1quina chapadora del a\u00f1o 1961, \u00a1pero que funciona muy bien! <\/p>\n\n\n\n

Todo esto, botella por botella, una por una.<\/p>\n\n\n\n


Una vez est\u00e1n chapadas, deben colocarse – tambi\u00e9n una por una – en posici\u00f3n horizontal en la cava. Este proceso se llama “hacer la rima”. Nosotros hacemos la rima con llatas de madera y es un momento de nervios porque es una estructura muy fr\u00e1gil que se sostiene con el mismo peso de las botellas. <\/p>\n\n\n\n

Cuando ya est\u00e9n colocadas ‘en rima’, si todo va bien, \u00a1las botellas empezar\u00e1n a hacer la segunda fermentaci\u00f3n!<\/p>\n\n\n\n
